Sides, Smoked
1 stick of butter
3 cups white milk
3 tablespoons flour
16 oz. Sharp cheddar cheese, shredded or cubed
1 cup Schuler’s Bar Cheese
1 6 oz. bag of shredded parmesan cheese
1 sleeve of Ritz crackers, crushed
1 box cavattappi noodles.
Boil noodles. Drain and pour into disposable foil pan
Melt half stick of butter in a saucepan. Whisk in approximately 3 TBSP of flour to make a roux. Slowly whisk in milk. Heat it up, but do not bring to a boil. Be careful not to scald the milk.
Slowly add the cheese to the milk, allowing it to melt as it's added.
Pour cheese sauce over the noodles and fold in.
Melt remaining butter in a fry pan and brown the cracker crumbs. Sprinkle on top of mac and cheese.
Preheat smoker to 275-300º. Put in cherry chunks for smoke. Smoke for 30-35 minutes or until edges begin to brown.
